Curried Lentil Soup 






Ingredients:


1 tablespoon vegetable oil

1 onion, diced

2 cloves garlic, minced

1 teaspoon grated ginger

2 tablespoons curry powder

4 cups vegetable broth

1 cup lentils, rinsed and picked over

1 cup diced tomatoes

1 cup diced carrots

1 cup diced potatoes

Salt and pepper, to taste



Instructions


1. In a big pot, warm the oil over medium heat. For about 5 minutes after adding it, sauté the onion until it is transparent.

2. Cook for a further minute after adding the garlic and ginger.

3. After one more minute of cooking, stir in the curry powder.

4. Lentils, tomatoes, carrots, potatoes, and vegetable broth should all be added to the saucepan. Bring to a boil, then lower the heat to a simmer, covering the pot, and cook for 30 minutes, or until the veggies and lentils are cooked.

5. To taste, add salt and pepper to the food. Serve warm.


Before serving, you can, if you'd like, add some chopped fresh cilantro or a squeeze of lime juice to the soup.
