Salad with Grilled Chicken is a delicious and healthy lunch option. Here's a recipe you can try:


Grilled Chicken


4 small boneless, skinless chicken breasts


2 tablespoons olive oil


Salt and pepper to taste



Salad


8 cups mixed greens

1 pint cherry tomatoes, halved

1/2 cup chopped red onion

2 avocados, diced


Dressing


3 tablespoons olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard
1 clove garlic, minced
Salt and pepper to taste



To make the grilled chicken



Preheat the grill to medium-high heat.


Rub the chicken breasts with the olive oil and season with salt and pepper.


Place the chicken on the grill and cook for 6-8 minutes on each side, or until the internal temperature reaches 165°F.


Remove the chicken from the grill and let it rest for a few minutes before slicing.



To make the salad


In a large bowl, combine the mixed greens, cherry tomatoes, red onion, and avocado.


To make the dressing, whisk together the olive oil, vinegar, mustard, garlic, salt, and pepper in a small bowl.
