Grilled Cheese Sandwich
2 slices of bread
2 slices of cheese (such as cheddar or American)
2 tablespoons butter, softened
Tomato Soup
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 (14.5-ounce) can diced tomatoes
1 cup chicken broth
1/2 teaspoon sugar
1/2 teaspoon dried basil
Salt and pepper to taste
How To make the grilled cheese sandwich
A frying pan should be heated to medium.
Each slice of bread should have the butter spread on one side.
Put one slice of bread in the frying pan butter-side down.
Add the cheese slices and the last slice of bread, butter side up, to the top.
Cook the bread until it is golden brown and the cheese has melted, about 2-3 minutes on each side.
To make the tomato soup
In a pan over medium heat, warm the olive oil.
Cook the onion and garlic together for about 5 minutes, or until the onion is transparent.
Add the chicken broth, sugar, basil, salt, and pepper along with the diced tomatoes. Cook for 10 minutes after bringing to a simmer.
Until the soup is creamy, purée it using an immersion blender. If you don't have an immersion blender, you can pour the soup into a blender, puree it, and then transfer it back to the pot.
